Specifics: Narrow theatre cook line & cookery school
Galgorm Group have been working alongside celebrity chef Niall McKenna and his wife Joanne since their first restaurant opened in the year 2000. Since then we have been employed to carry out all of their kitchen and bar works across all 4 of their restaurants and 2 cookery schools across Belfast. One of the biggest challenges we have worked on with the group was for Hadskis. The building is very long and narrow, but Niall wanted a front of house theatre style cooking with not much room to spare to walk past. The challenge was overcome by installing Angelo Po 700 series cooking equipment which allowed the flexibility on the menu and created an efficient working space for the chefs. Coupled with the Mibrasa charcoal oven and the production/ prep kitchen on level 2, this is one of the groups busiest restaurants and an asset to Belfast’s Cathedral Quarter.
Galgorm Group also had the pleasure of designing and installing the extremely busy Cookery School above Belfast Bar and Grill where customers spend the day being taught by Niall or some of his fellow chefs to cook everything from a cake to a curry. This cookery school had the challenge of being durable and heavy duty enough, but not intimidating to a novice chef. We designed a “U” shaped island suite with built in induction hobs and convection ovens below, finished off with some high glass laminate carcasses to soften the image of the entire school.
In 2019 the ground floor cooking line was updated to a Charvet Pro 700 series wall suite which incorporated induction cooking to reduce the on-going energy costs, and to add a robustness that only comes with Charvet.
